Organic coffee seeks to preserve the environment in coffee producing regions. In order to be certified organic, coffees must be chemical and pesticide free. All organic coffees are also shade grown, which means the coffees are grown under a canopy of trees, allowing the coffee to be naturally fertilized. Fair trade coffee strives to give growers in developing nations a living wage. To meet production costs, coffee farmers need to be paid around 80¢ per pound, but the market rate is about 50¢. The low market rate results in less than 12¢ an hour for the workers who pick and process the beans. Companies that are fair-trade certified buy coffee directly from farmers at set prices that allow them to pay their workers a living wage. This allows small coffee farmers to continue growing the highest quality coffee. Varietal availability may vary from season to season.
